Typically, I keep all of these meal plans in one place - in my notepad app on the phone. This way when I plan the next trip, I just access my running list and can steal ideas from the previous trip. Here is a look at several of my meal plans from past camping excursions:
Breakfast
Breakfast Tacos: eggs bacon, potatoes, cheese, salsa
Cinnamon roll waffles (made on waffle iron)
Lunch
Meatball Sliders + marinara + mozzarella
Honey garlic sticky meatballs + rice
Dinner
Crockpot pulled pork + slider buns + chips + coleslaw
Chilli + cheese + sour cream + sourdough bread + butter
PM Snack
Bacon brown sugar wieners in the small crockpot
Fruit salad: strawberries, pineapple, grapes, blackberries

Sourdough french toast + fruit salad

Premade pulled pork + coleslaw + bbq kettle chips
Ham & Cheese sliders + coleslaw + bbq kettle chips
Dinner
Garlic butter steak + herbed potatoes
Beef Quesadillas + chips + salsa

Veggie tray + chips + dips

Breakfast
Eggs + potatoes + bacon
Migas + potatoes + salsa
Croissant sandwiches: eggs, ham, cheese
Breakfast tacos: eggs, bacon, potatoes, cheese, salsa
Lunch
Chicken salad croissant sandwiches + chips
Ham & Cheese roll ups + carrots
Garlic sticky meatballs + rice
Barbeque brisket sandwiches + chips
Dinner
Bacon avocado cheeseburgers + chips
Pork chops + broccoli cheese stove casserole + carrots
Ham steak + macaroni & cheese + bagged salad
Taco bar: ground beef, tortillas, creamy jalapeno dip, pineapple salsa, cheese, salsa, cilantro
PM Snack
Fruit salad: kiwi, blackberries, blueberries, raspberries
Blueberry muffins & cheese sticks
